Stir Fried Tofu with Vegetables

Ingredients:

10 oz. extra firm tofu, drained well
1 red bell pepper
½ green pepper
1 yellow onion
2 T. canola oil
1 tsp. sesame oil
1 hot red chili (cayenne preferably), seeded and sliced
2 tsp. minced garlic
1 tsp. minced fresh ginger
2 tsp. minced lemongrass
1 T. fish sauce
1 T. soy sauce
½ tsp. brown sugar
Salt, to taste
Oyster sauce
Cilantro

Directions:

Cut tofu into strips. Remove seeds from the peppers, and cut into strips. Cut onion in thin slices.

In a wok or skillet, heat oils to high heat and add peppers and onion, and stir fry for 3-4 minutes.

Add the chili, garlic, ginger, and lemongrass. Stir.

Add the tofu and then fish sauce and soy sauce, sugar and salt.

Stir and toss for 2 minutes longer.

Place on serving plate, and drizzle oyster sauce and sprinkle minced cilantro.
